N.B. Maple Producers Create Value-Added Products

By Allan Dearing Jan 19, 2023 | 5:57 AM

Maple syrup producers in New Brunswick are tapping their trees as they prepare for this year’s season.

Louise Poitras, executive director of the provincial association, said the industry is moving toward more value-added products.

“What we’re now seeing are more innovative products like cotton candy or maple kisses for example which were very popular during the holidays.”

But Poitras said some producers have even gone a step further.

“We have maple syrup infused with whiskey, gin or vodka. And we even have spices.”

The province’s maple producers enjoyed a record year in 2022 and New Brunswick remains the third largest producer in the world after Quebec and the State of Vermont.

Depending on weather conditions, the maple sugar season generally runs from March across the south until May across the north.
